A high-protein brunch.
Serves 2.
• 4 eggs
• 100g baby spinach
• 40g Chuck Steak jerky, chopped
• 80g feta, cut into cubes
• 25ml olive oil
• White pepper to taste
1. Crack and mix eggs with a fork.
2. Stir through the jerky and feta and chopped spinach.
3. Heat up a nonstick pan and add the olive oil.
4. Cook gently until the base is semi-set.
5. Flip onto a plate and put back into the pan to continue cooking the other side.
The jerky adds texture and the feta adds seasoning, meaning you need less salt.
