In the 1950s, Ancel Keys launched the Seven Countries Study - a nutrition study that would go on to shape half a century of health advice.
Keys claimed that saturated fat caused heart disease. But here’s the catch: he cherry-picked the countries.
Even the Framingham Heart Study, used to support Keys’ claims, ultimately admitted: “There is no discernible relationship between dietary cholesterol and serum cholesterol.”
This wasn’t science. It was a hypothesis forced into the data. And it launched a global war on fat.
Once the U.S. adopted Keys’ narrative, the 1980 Dietary Guidelines recommended cutting saturated fat and cholesterol.
The food industry saw an opportunity and took it.
Meanwhile, the real result?
Obesity, diabetes, heart disease, and metabolic illness skyrocketed.
